Ingredients

  • 9 Eggs (size M)
  • 375 g Butter or margarine
  • 375 g Sugar
  • 1 package Vanillin sugar
  • 3-4 Tbsp Rum
  • 150 g Cornstarch
  • 1 package Baking Powder
  • 225 g Flour
  • 200 g Orange marmalade
  • 300 g Dark chocolate coating
  • 20 g Coconut oil
  • 50 g white couverture
  • 7-10 Tbsp chocolate stars
  • baking paper

Directions

    Separate 6 eggs. Cream fat. Gradually add sugar, vanillin sugar, 3 eggs, egg yolks and rum and beat until foamy. Mix starch, baking powder and flour, stir in by the spoonful. Beat egg whites until stiff and fold in carefully. Line the bottom of a springform pan (26 cm Ø) with baking paper and spread approx. 2 tbsp. of dough on top. Bake under the preheated grill for 1-2 minutes until golden brown. Then spread again about 2 tbsp. of dough on top and bake. Work the whole dough little by little in this way. Let the cake cool down, remove from the tin and place on a cake rack. Heat the jam, pass it through a sieve and spread it on the cake. Let dry for 30 minutes. Melt the dark chocolate coating and coconut oil over a warm water bath, let it cool down a little. Cover the cake with it. Let it set. Melt the white couverture as well. Spread on a chilled marble board and let it set in the fridge. Use a spatula to scrape the rolls and decorate the cake with them. Decorate with chocolate stars if desired

    If you do not have an oven grill, you can bake the cake at the highest oven setting. The baking time is 1-2 minutes per layer of dough. However, the cake gets a dark edge, which can be carefully cut off
