Ingredients

  • 650 g Dark chocolate
  • 150 g Milk chocolate
  • 150 g white chocolate
  • 4 Eggs (size M)
  • 1 package Vanillin sugar
  • 150 g Sugar
  • 40 g Cornstarch
  • 60 g Flour
  • 2 sheets Gelatine
  • 350 g Cream cheese
  • 400 g Whipped cream
  • 25 g Coconut oil
  • 7-10 Tbsp sugar pearls
  • baking paper

Directions

    Chop 300 g dark chocolate and melt over a warm water bath. Spread the chocolate on a baking tray lined with baking paper. When the chocolate has just set, cut out large and small stars.

    Make stars from whole milk and white chocolate as well.

    Separate eggs. Beat the egg whites, vanillin sugar and 100 g sugar with the whisks of the hand mixer until stiff. Stir in egg yolks. Sift the starch and flour on top and fold in carefully. Spread about 1/4 of the dough on a baking tray lined with baking paper as a circle (26 cm Ø).

    Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 10 minutes. Take out and let cool down. Also make 3 more bases.

    Chop 150 g dark chocolate and melt over a warm water bath. Soak gelatine in cold water. Mix cream cheese and 50 g sugar. Stir in liquid chocolate. Whip 200 g cream until stiff and carefully fold into the cream cheese mixture, dissolve gelatine.

    Stir in 5 tablespoons of the cream cheese mixture, stir into the remaining cream cheese.

    Carefully peel the baking paper from the sponge cake bases. 1 Place the cake base on a cake plate and enclose it with a cake ring. Spread approx. 1/3 of the cream cheese cream on it, place a cake base on top. Repeat until the cream and bases are used up.

    Finish with a bottom. Put the cake in a cool place for at least 1 hour.

    Chop 200 g dark chocolate and coconut fat. Heat 200 g cream in a small pot. Melt chocolate and coconut oil in it. Let it cool down for about 15 minutes. Remove the cake from the ring and cover with the chocolate cream.

    Press chocolate stars to the edge and decorate the cake with sugar pearls in a star shape. Chill the cake for about 1 hour.
