Put the flour and 1 pinch of salt in a large mixing bowl. Stir yeast and 1 tablespoon sugar until liquid. Add 75 g sugar and liquid yeast to the flour. Melt butter and add milk. Add lukewarm fat-milk mixture and 1 egg to the flour. Mix to a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 45 minutes
Knead the yeast dough with floured hands again. Put it on a greased, floured fat pan of the oven (32 x 39 cm), roll it out and pull up the edges
Peel the bananas, chop them coarsely and puree them finely with lemon juice. Stir curd cheese, cream cheese, pureed bananas and 250 g sugar until smooth. Stir in 8 eggs individually and pudding powder at the end. Fold in the chocolate flakes. Spread the quark mixture on the dough and bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 45-50 minutes. Take out and let cool down for about 2 hours
Cut the vanilla pod lengthwise and scrape out the pulp. Pour cherries into a sieve and drain well. Collect the juice. Take off 4-5 tablespoons of juice, stir until smooth with starch. Boil up remaining liquid, vanilla pod, vanilla pulp and 4 tbsp. sugar in a pot, stir in the starch. Let simmer for about 1 minute while stirring. Remove from the heat and carefully fold in the cherries. Let the cherries cool down and put them in a cool place
Roast the almonds in a pan without fat until golden brown, take them out. spread cherries over the cake and sprinkle with almond flakes
