Balsamico fillet with kohlrabi-sugar-pepper-vegetables and Röstifleckerln

Ingredients

Servings: 4
  • 3 Garlic cloves
  • 1 TABLESPOON Balsamic vinegar
  • 6 TABLESPOONS Oil
  • 2 Pork fillets (approx. 350 g each)
  • 500 g Kohlrabi
  • 250 g Sweet peas
  • 2 Onions
  • 1 kg floury potatoes
  • 1 Egg (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Nutmeg
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Butter
  • 1 collar Parsley

Directions

    For the fillet, peel and finely chop the garlic. Mix with vinegar and 2 tablespoons of oil. Dab fillets dry, place in a bowl and spread marinade on top. Turn the meat in it and chill for at least 1 hour.

    Clean, peel and slice the kohlrabi. Wash and clean the mangetouts. Peel onions, dice 1 finely. Wash, peel and roughly grate the potatoes. Grate well in a clean cloth.

    Grate the remaining peeled onion and add it to the potatoes together with the egg. Mix everything, season with salt and nutmeg.

    For the fillet, heat 2 tablespoons of oil in an ovenproof pan. Brown the fillets in it all around. Season with pepper. Cook in the preheated oven (electric cooker: 100 °C/circulating air: 75 °C/gas: see manufacturer) for approx. 20 minutes.

    For the Rösti, heat 1 tablespoon of oil in a coated frying pan (approx. 24 cm Ø). Add half the potato mixture and flatten. Fry over medium heat for about 5 minutes. Then use a spatula to cut into large pieces and turn.

    Add 1 tablespoon of butter and continue to fry for 2-3 minutes. Remove the Rösti, place in the oven with the fillets and keep warm. Fry the rest of the mixture in the same way as the Rösti and keep warm.

    For the vegetables, heat 2 tablespoons of butter in a saucepan. Sauté the onion cubes in it until translucent. Add kohlrabi and 150 ml water, bring to the boil. Cover and cook for about 8 minutes. Add mangetouts to the kohlrabi and simmer covered for another 2-3 minutes.

    Season to taste with salt and pepper. Wash parsley, chop finely and stir into the vegetables. Cut the fillets into slices. Serve with vegetables and rösti.
