Ingredients

Servings: 9
  • 1.5 kg small mushrooms
  • 3 Onions
  • 4 Garlic cloves
  • 1/2 potty or bunch of thyme and rosemary
  • 4 TABLESPOONS Olive oil
  • 2-3 Bay leaves
  • 100 ml Balsamic vinegar
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp coarse sea salt
  • 7-10 Tbsp Sugar

Directions

    Clean and wash mushrooms. Peel onions and garlic. Chop the onions coarsely. Wash herbs, pluck thyme, chop rosemary

    Fry the mushrooms in 3 portions in hot oil for about 5 minutes. Fry with onions, garlic, herbs and bay leaf for another 2-3 minutes. Deglaze with vinegar and simmer briefly. Season with pepper, sea salt, 1 pinch of sugar. Keep cool overnight. Served with: baguette
