Ingredients

  • 2 Avocados (about 350 g each) "Fuerte
  • 2 TEASPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground black pepper
  • 4 Eggs (size M)
  • 1 red onion
  • 200 g Tomatoes
  • 1 TEASPOON Sugar
  • 2 TABLESPOONS light balsamic vinegar

  • 2 TABLESPOONS Olive oil
  • 8 discs Bacon (à approx. 10 g)

Directions

    Cut the avocados in half. Remove the stone carefully. Brush cut surfaces with lemon juice. Cut a very small piece off thinly on the underside of the halves to create a standing surface. Place them side by side on a baking tray lined with baking paper. Season hollows with salt and pepper

    Break the eggs one by one. Slide one egg into each trough. Egg whites may run a little bit on the baking tray. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 20 minutes

    Meanwhile peel and finely dice the onion for the salsa. Clean, wash and finely dice the tomatoes. Mix onions and tomatoes. Mix with salt, pepper, sugar and vinegar. Season with Tabasco. Mix in oil

    Cut the bacon into strips and let it crisp in a pan without fat, take it out. Remove avocados from the oven. Sprinkle avocado halves with salt, pepper and rendered bacon, arrange on plates. Add salsa. Tastes good with farmhouse bread
