Bacon dumplings on onion vegetables

Ingredients

  • 750 g floury potatoes
  • 150 g streaky smoked bacon
  • 500 g Onions
  • 100 g Cornstarch
  • 1/4 l Milk
  • 7-10 Tbsp Salt
  • 200 g Whipped cream
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Peel and chop 3 onions. Dice the bacon and leave it crispy in a pan. Take out 3 tablespoons of bacon, add diced onions to the bacon in the pan and fry them.

    Let the onion-bacon mixture drip off a little. Drain the potatoes, rinse with cold water, peel and press them while still warm through a potato press or mash them finely. Mix with the onion-bacon mixture and the cornstarch.

    Heat half of the milk and stir into the mixture. Season to taste with salt if necessary. Form 8 dumplings from the dough. Cook in plenty of boiling salted water for about 30 minutes. Cut the remaining onions into rings, bring to the boil with the remaining bacon, cream and remaining milk and let it boil down slightly over a high heat.

    Season with salt and pepper. Arrange potato dumplings on the onions, garnish with parsley if necessary. Serve with fresh salad.
