Bacon and sheep's cheese pancakes

Ingredients

Servings: 4
  • 3 Eggs (size M)
  • 100 g Flour
  • 1/4 l Milk
  • 1 pinch Salt
  • 150 g Sheep's cheese
  • 12 discs Bacon
  • 1/2 bunch Spring onions
  • 3 TSP clarified butter

Directions

    Mix eggs, flour, milk and salt with the whisk of the hand mixer to a smooth dough. Let rest for 30 minutes. Crumble the feta cheese. Drain the bacon slices in a pan, take them out and let them drip off on kitchen paper. Clean, wash and chop the spring onions.

    Fry briefly in bacon fat. Put 1/4 of the dough into the hot pan with the bacon fat and fry. Turn the pancakes and sprinkle with 1/4 cheese, bacon and spring onions. Fry the pancakes. Fry 3 more pancakes in the same way, adding 1 teaspoon of clarified butter to the pan
