Autumn salad with pears, walnuts & bacon

Ingredients

Servings: 4
  • 4 discs Bacon
  • 4 TABLESPOONS Walnut kernels
  • 150 g Arugula
  • 1 red onion
  • 3 TABLESPOONS Balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TEASPOON Honey
  • 4 TABLESPOONS good olive oil
  • 2 ripe pears (e.g. Williams Christ)
  • 100 g Blue cheese

Directions

    Fry the bacon in a pan without fat until crispy. Remove and let it drain on kitchen paper. Coarsely chop the nuts and roast them in the bacon fat. Take out, let it cool down.

    Sort the arugula, wash and drain. Peel onion and slice or cut into fine rings. For the vinaigrette, mix vinegar, salt, pepper and honey. Fold in the oil. Wash the pears, quarter them, remove the seeds and cut them into thin slices.

    Mix rocket, onion, pears, nuts and vinaigrette. Arrange. Crumble bacon and cheese over it. Serve with baguette.
