Aubergine-Zucchini rolls with ham

Ingredients

  • 1 large zucchini
  • 1 large aubergine
  • 7 TABLESPOONS Oil
  • 2 Garlic cloves
  • 1 Bay leaf
  • 75 ml dry white wine
  • 4 TABLESPOONS Balsamic vinegar
  • 7-10 Tbsp juice of 1/2 lemon
  • 3 Stem(s) Thyme
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Double cream cream cheese
  • 1/2 bunch Spring onions
  • 8 wafer-thin slices of cooked ham
  • 1 Tomato
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Lemon
  • 7-10 Tbsp wooden skewers

Directions

    Clean and wash the zucchini and eggplant and cut them lengthwise into 8 thin slices. Heat 3 tablespoons of oil in a pan. Brown the vegetable slices in it and put them in a flat dish.

    Peel and finely chop the garlic. Heat 2 tablespoons of oil. Fry garlic and bay leaf for 2 minutes. Deglaze with wine, vinegar and lemon juice. Wash the thyme, dab dry and, except for something to garnish, pluck the leaves from the stalks.

    Season with salt, pepper and thyme, let it cool down a bit. Pour the stock over the vegetable slices and let it stand for about 1 hour. Mix cheese and 2 tablespoons of oil. Season to taste with salt and pepper.

    Clean and wash the spring onions, cut them into fine rings and stir them into the cheese. Let zucchini and eggplant slices drip off on kitchen paper. Place one courgette and one eggplant slice on top of each other.

    Spread cream cheese on top. Cover with 1 slice of ham and roll up. Pin with wooden skewers. Wash and quarter the tomatoes and remove the seeds. Cut the flesh into small cubes.

    Remove 4 tablespoons of vegetable marinade and fold in the diced tomatoes. Season to taste with salt, pepper and sugar. Arrange the zucchini and eggplant rolls on a plate. Sprinkle tomato cubes on top. Serve garnished with lemon slices and thyme.

    Ciabatta bread tastes good with it.
