Asparagus with basil sauce and turkey filet

Ingredients

Servings: 4
  • 1 kg white asparagus
  • 7-10 Tbsp Salt
  • 1/2 TEASPOON Sugar
  • 500 g Turkey filet
  • 1/4 l Oil
  • 7-10 Tbsp Pepper
  • 2 Basil pots
  • 2 Egg Yolk
  • 2 TEASPOONS medium hot mustard
  • 3 TABLESPOONS Wine vinegar

Directions

    Wash the asparagus, peel and cut off the woody ends. Cook in boiling salted water covered with sugar for about 20 minutes. In the meantime wash and dry the turkey filet. Fry all around in 2 tablespoons of hot oil until golden brown. Season with salt and pepper. Fry over medium heat for about 20 minutes. Meanwhile, for the sauce, wash the basil, dab dry (put something aside for garnishing) and puree.

    Mix egg yolk, mustard and vinegar. Slowly stir in the remaining oil with the whisk of the hand mixer. Add pureed basil. Season to taste with salt and pepper. Cut the turkey filet into slices and arrange on plates with the asparagus and sauce. Serve garnished with basil leaves. Serve with fresh baguette
