Wash the asparagus and cut the ends off generously. Cut the asparagus into pieces. Pre-cook in boiling salted water with some sugar for about 5 minutes, drain. Put 4-5 asparagus tips aside
Peel and finely dice the onion and garlic. Wash and chop the arugula. Cut salmon into strips, except for 1-2 slices. Whisk eggs. Stir in asparagus, salmon and rocket. Seasoning
Heat the oil in a pan (approx. 24 cm Ø). Sauté onion and garlic in it. Add the egg. Cover and let it simmer at low heat for about 20 minutes. Brown lightly under the grill if necessary. Garnish with pieces of salmon, asparagus tips and lemon corners
