Asian meat skewers with cucumber salad

Ingredients

Servings: 4
  • 800 g Pork tenderloin
  • 1 small red chili pepper
  • 5 Stem(s) Coriander
  • 3 TABLESPOONS Soy sauce
  • 3 TABLESPOONS Lemon juice
  • 3 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 1 Cucumber
  • 4 TABLESPOONS Balsamic vinegar
  • 1 TEASPOON medium hot mustard
  • 125 g Whole milk yoghurt
  • 1-2 TEASPOONS Sugar
  • 8 Shashlik skewers

Directions

    Dab the meat dry and cut into cubes of about 1 cm. Chop the chilli finely. Wash coriander, shake dry and chop finely. Mix soy sauce, lemon juice, chilli and coriander, fold in oil.

    Season with salt and pepper. Marinate the meat for about 30 minutes.

    Peel and finely chop the onion. Wash the cucumber, grate dry and cut lengthwise into strips with a peeler. Mix vinegar, mustard and yoghurt, season with sugar and salt.

    Mix cucumber and onion with the dressing. Leave to stand for approx. 30 minutes.

    Put meat on 4 skewers. Grease a grill pan with oil and fry the skewers in it in portions on each side for about 4 minutes. Serve the meat skewers with the cucumber salad. Rice tastes good with it.
