Apple stuffed with sprouts salad

Ingredients

Servings: 4
  • 2 medium-sized carrots
  • 2 Spring onions
  • 100 g Frisée salad
  • 250 g Mongoose sprouts
  • 4 medium-sized apples
  • 7-10 Tbsp Juice of 1 lemon
  • 2-3 TABLESPOONS Cider vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 4 TABLESPOONS Oil (e.g. grape seed oil)

Directions

    Peel, wash and roughly grate the carrots. Clean, wash and cut spring onions into rings. Clean, wash and pluck salad into small pieces (put some frisée aside). Wash the sprouts and let them drip off.

    Wash the apples, cut off one lid each and hollow out the apples. Remove the apple pieces (remove the core) and sprinkle the apples with lemon juice to prevent them from turning brown. Mix the salad ingredients and arrange in the apples.

    If salad is left over, place it on plates with some frisée leaves and place the apples on top. Mix vinegar with salt, pepper and 1 pinch of sugar. Whip the oil into it. Pour the vinaigrette over the salad and let it steep a little.
