Apple pie from the tray

Ingredients

Servings: 24
  • 100 g Butter or margarine
  • 200 ml Milk
  • 500 g Flour
  • 100 g + 2-3 tablespoons sugar
  • 1 cube (42 g) fresh yeast
  • 1 egg (size M)
  • 1 pinch Salt
  • 1.5 kg Apples
  • 7-10 Tbsp Juice of 1 lemon
  • 3 TABLESPOONS Apricot Jam
  • 2 stem(s) Lemon balm
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour

Directions

    Melt 100 g fat and let it cool down. Warm the milk lukewarm. Mix flour and 100 g sugar in a mixing bowl, press a depression in the middle. Mix yeast and 100 ml milk. Pour yeast milk into the flour bowl and mix with some flour from the rim.

    Cover and let rest in a warm place for about 10 minutes. Add egg, liquid fat, salt and 100 ml milk to the rim and knead everything with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes. Peel and quarter apples and cut out the core. Cut quarters into thin slices and sprinkle with lemon juice. Roll out the yeast dough on a floured work surface (approx. 32 x 39 cm) and place on a greased and floured baking tray (32 x 39 cm). Cover the dough again and let it rise for about 15 minutes, then cover it tightly with the apple slices and sprinkle it with 1 tablespoon of sugar. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 25 minutes. Warm up the jam and pass through a sieve. 10 minutes before the end of the baking time, brush the apples with jam and continue baking. Remove the cake from the oven and let it cool down.

    Cover the dough again and let it rise for about 15 minutes, then cover it tightly with the apple slices and sprinkle it with 1 tablespoon of sugar. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 25 minutes. Warm up the jam and pass through a sieve. 10 minutes before the end of the baking time, brush the apples with jam and continue baking. Remove the cake from the oven and let it cool down. Wash lemon balm and dab dry. Decorate the cake with lemon balm leaves. Whipped cream tastes good with it
