Apple Fig Pancakes

Ingredients

Servings: 4
  • 30 g Butter or margarine
  • 2 Eggs (size M)
  • 50 g Sugar
  • 1 pinch Salt
  • 1/4 l Buttermilk
  • 275 g Flour
  • 2 TEASPOONS Baking Powder
  • 2 Apples
  • 2–3 Figs
  • 2-3 TABLESPOONS Oil
  • 4 scoops of vanilla ice cream (about 50 g each)
  • 4 TSP Maple syrup

Directions

    Melt the fat and let it cool down. Mix eggs, sugar and salt. Stir in buttermilk and liquid fat. Mix flour and baking powder and stir into the mixture. Wash apples and figs, dab dry. Cut apples into quarters, cut out the core. Cut fruits into thin slices

    Heat the oil in portions in a large frying pan. Place about 5 heaped tablespoons of dough as 5 round blobs in the pan. Press apple and fig wedges into the dough. Fry on medium heat for 2-3 minutes on each side until golden brown. Remove from the pan and keep warm. Bake more pancakes from the remaining dough. Arrange the pancakes on ice and sprinkle with maple syrup
