Apple crumble cake

Ingredients

  • 375 g Flour
  • 225 g Sugar
  • 250 g Butter or margarine
  • 2 Eggs (size M)
  • 1 package Vanillin sugar
  • 250 g Low-fat curd
  • 25 g Semolina
  • 1 glass (370 ml) Apple compote
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Icing sugar

Directions

    For the crumble dough, mix flour, except for 2 tablespoons, and 175 g sugar. Melt the fat and pour over it. Mix the ingredients with the dough hooks to form crumbles. Sprinkle remaining flour over the crumbles and shake everything in the bowl.

    Separate eggs. Beat egg whites and vanilla sugar until stiff. Mix egg yolk, quark, remaining sugar and semolina. Fold in the beaten egg white. Grease the bottom of a springform pan (24 cm Ø). Fill in half of the crumbles and press down firmly.

    First spread the curd, then the apple compote on top. Sprinkle the rest of the crumbles over it. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for about 50 minutes. Serve dusted with icing sugar.
