Peel, quarter and core the apples. Possibly cut off 4 apple slices, the rest of the apples into large pieces. Simmer everything covered with apple juice or water, lemon juice and sugar for 5-6 minutes. Let it cool down
Mix sour cream, yoghurt and vanillin sugar. Roast the almonds in a pan without fat, take them out and let them cool
Serve the stewed apples. Spread sour cream and almonds on top. Decorate with icing sugar, apple wedges and lemon balm
