Apple-bacon pancakes

Ingredients

Servings: 4
  • 4 Eggs
  • 200 g Flour
  • 1/4 l Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 2-3 (approx. 300 g) Apples
  • 4 discs Breakfast bacon (Bacon)
  • 4 TSP clarified butter or rape seed oil
  • 7-10 Tbsp Maple syrup

Directions

    Separate two eggs. Mix flour, milk, egg yolk and 2 eggs to a smooth dough. Stir in 1 pinch of salt and 1 pinch of sugar. Leave to swell for about 10 minutes.

    Beat the egg white and 1 pinch of salt until stiff. Carefully fold into the dough. Wash the apples. Cut out the core with an apple cutter. Cut apples into rings. Cut the bacon slices in half crosswise.

    Heat 1 tsp. clarified butter in a coated pan (approx. 20 cm Ø). Fry 2 slices of bacon in it. Put 3-4 apple rings in it and spread approx. 1⁄4 dough evenly over it. Fry over medium heat on both sides until golden brown.

    Keep the pancakes warm.

    Bake 3 pancakes from the remaining ingredients in the same way. Serve the pancakes with maple syrup.
