Melt 50 g butter, cool down a little. Whisk eggs, stir in melted butter and buttermilk. Mix flour, baking powder, salt and sugar, stir in. Let dough swell for about 10 minutes
Heat 1 tsp. clarified butter in a frying pan. Bake about 3 small golden brown pancakes from 1/4 dough. Bake about 9 more pancakes in the same way
Form 4 small balls or "curls" from 40 g butter. Arrange 3 pancakes and 1 ball of butter on each. Sprinkle each with 1 tablespoon of maple syrup and decorate with lemon balm if desired
