Clean the mushrooms, wash them if necessary and cut them in half or quarters depending on size. Heat butter in a large pan. Fry the mushrooms for about 5 minutes, then add diced ham and spaetzle. Continue frying for about 5 minutes while turning.
Season to taste with salt, pepper and nutmeg.
Wash parsley, shake dry, chop leaves coarsely and mix with the spaetzle. Arrange the spaetzle and sprinkle with cheese. Serve immediately.
