Put the flour in a bowl. Make a depression in the middle. Add sugar, salt and crumbled yeast. Pour some lukewarm milk over it. Cover with flour and let it rise for about 20 minutes. Knead in the remaining milk and fat and leave to rise again covered in a warm place for 30 minutes. Peel and quarter the apple and remove the core.
Cut into small cubes. Knead yeast dough again and divide into 16 equal pieces. Form into round rolls and knead in some apple pieces. Put them on a baking tray lined with baking paper and let them rise again for 30 minutes. Whisk the egg yolk with cream. Brush the rolls with the cream and bake in a preheated oven (electric: 200 °C/ gas: level 3) for about 15 minutes.
