Cut melon into slices and remove seeds. Remove the flesh from the skin, then cut into strips. Clean and wash the radishes and cut them into thin slices. Wash the mint and put a few leaves aside for garnishing.
Cut remaining leaves into fine strips.
Wash the limes in hot water and dry them. Finely grate the peel of 1 lime, then squeeze the fruit. Mix lime juice, lime zest, salt, pepper and 1/2 tsp. sugar. Fold in the oil. Mix the vinaigrette with the prepared salad ingredients.
Chill for about 15 minutes.
Cut the rest of the lime into slices. Serve the melon salad and crumble the cheese on top. Garnish with remaining mint and lime wedges.
Drink tip: Cool rhubarb spritzer goes well with it.
