Ingredients

  • 100 g in-shell roasted pistachios
  • 300 g Cucumber
  • 2.5 kg Watermelon
  • 150 g Feta cheese
  • 1 red onion
  • 4 stems Peppermint
  • 4 stems Parsley
  • 1 Garlic clove
  • 4 TABLESPOONS white balsamic vinegar
  • 2 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Remove the pistachio kernels from the shells and chop them. Wash, clean and chop the cucumber. Cut melon into slices, cut flesh from the skin and dice. Dice the cheese. Peel and chop onion. Wash herbs, shake dry. Cut and chop the leaves from the stems.

    Peel the garlic and press it through a garlic press. Mix vinegar and oil, season with salt, pepper and garlic. Mix melon, cucumber, onion, cheese, pistachios, herbs and sauce and serve.
