Waffles with plum compote and cinnamon cream (diabetics)

Ingredients

Servings: 8
  • 300 g pitted, cleaned plums
  • 7-10 Tbsp liquid sweetener
  • 125 g Butter or margarine
  • 24 g Diabetic Sweetness
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 3 Eggs (size M)
  • 150 g Flour
  • 8-10 Tbsp Mineral water
  • 1-2 TABLESPOONS Oil
  • 75 g Low-fat curd
  • 75 g Schmand
  • 1/2 TEASPOON Cinnamon
  • 7-10 Tbsp Mint

Directions

    Bring plums to the boil with 8 tablespoons of water and a few drops of sweetener and cook over a low heat for about 8 minutes. Let it cool down. In the meantime, stir the soft fat, diabetic sweetness, salt and lemon peel until creamy. Stir in eggs one at a time. Sift flour over them and stir in. Stir in mineral water. Preheat waffle iron.

    Coat the upper and lower baking surfaces with a little oil. Bake 8 waffles from the dough one after the other until golden brown. Take them out and let them cool down. Stir curd, sour cream, cinnamon and a few drops of sweetener until smooth. Serve the waffles with plum compote and cinnamon cream. Decorate with a mint leaf
