Peel, wash and roughly grate the potatoes. Peel the onions. Grate one onion with the potatoes. Add eggs and potato flour and mix well. Season with salt and pepper. Finely dice the remaining onion.
Add egg yolk and diced onion to the minced meat and knead. Season with salt, pepper and paprika. Heat the waffle iron and spread with oil. Bake 8 thin waffles from the potato dough and keep warm. Divide the minced meat into four portions. Form four plates in the size of the waffle iron. Grease the iron with oil. Place the minced meat on top and bake for three to four minutes. Clean, wash and drain the salad well. Stir remoulade and yoghurt until smooth. Cut half the cress from the bed and stir into the tartar sauce. Clean, wash and thinly slice the tomatoes.

Cover with tomato slices. Add some tartar sauce to each wafer. Cover with remaining waffles and garnish with remaining cress. Add the rest of the tartar sauce in a small bowl
