Bring to the boil again while stirring continuously. Fold in the pistachios. Place 4 pudding moulds in cold water, fill in the pudding and chill. Turn the pudding out onto 4 plates. Beat eggs and sugar in a hot water bath until frothy.
Stir in the cocoa and pour into the puddings. Decorate with white chocolate flakes if desired. Serve immediately.
