Ingredients

  • 225 g Butter
  • 100 g Double cream cream cheese
  • 150 g Sugar
  • 225 g Flour
  • 1/2 TEASPOON Baking Powder
  • 50 g Cocoa powder
  • 125 g demerara sugar
  • 1 egg (size M)
  • 100 g Dark chocolate
  • 7-10 Tbsp Cling film
  • baking paper

Directions

    For the cream cheese filling, melt 25 g butter and let it cool down. Mix cream cheese and 25 g sugar, stir in 25 g flour and liquid butter. Cover and chill for about 2 hours. Mix 200 g flour, baking powder and cocoa in a bowl. Mix 200 g butter, 125 g sugar and brown sugar until creamy. Stir in egg. Add flour mixture and stir in as well. Chop the chocolate and mix into the dough. Form dough on a piece of foil into a flat plate. Wrap in foil and put in a cold place.

    Use an ice cream scoop to cut 2 balls from the chocolate dough. Press each ball to flatten it. Use a teaspoon to cut a cam off the cream cheese mixture and shape it into a round shape (the mixture is soft but malleable). Place in the middle of a chocolate tart. Carefully place the second chocolate coin on top. Press the edges well together with your fingers, without the cream cheese mass escaping to the sides. Carefully press the cracks in the surface of the dough together again or close them with additional dough. Process remaining dough and cream cheese mixture in the same way. Place on 2-3 baking trays lined with baking paper

    Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 12 minutes one after the other. Allow to rest briefly on the baking tray, then carefully place on the cake rack and allow to cool
