Tyrolean bacon potatoes

Ingredients

  • 8 small potatoes (triplets)
  • 4 discs South Tyrolean bacon
  • 2 TEASPOONS spicy mustard
  • 1 TABLESPOON liquid honey
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp coarse pepper
  • 50 g Lamb's lettuce
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

    Wash the potatoes and cook in boiling water for about 15 minutes. Halve bacon lengthwise, spread with mustard and sprinkle with honey. Drain potatoes, let cool and peel. Roll one potato in 1/2 bacon slice at a time. Heat 1 tablespoon of oil in a frying pan. Fry the potatoes for about 10 minutes while turning. Sprinkle with coarse pepper

    Clean, wash and drain the lamb's lettuce. Mix vinegar with salt and pepper. Fold in 2 tablespoons of oil. Mix vinaigrette and salad. Arrange salad and potatoes on a plate
