Wash, halve, peel and grate the rutabaga roughly with a grater. Place in a sieve, squeeze well with your hands and place in a bowl. Peel, halve and dice the onion. Mix the diced onion, egg, potato flour and diced ham into the turnip grater and season with salt, pepper and nutmeg
Heat the clarified butter in portions in a frying pan, form approx. 12 Rösti in portions (6-7 cm Ø) and fry over medium heat for 6-8 minutes, turning several times
Remove the Rösti from the pan, drain briefly on kitchen paper and serve
