Ingredients

  • 150 g Turnip
  • 1 Onion
  • 1 small apple
  • 250 g fat smoked bacon
  • 300 g Goose fat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp dried marjoram
  • 1/2 bunch Parsley

Directions

    Peel the turnip and cut into small rhombs. Peel and chop the onion. Peel and quarter the apple and remove the core. Cut the apple quarters into small cubes. Finely dice bacon.

    Heat lard and bacon in a pot. Leave out bacon cubes while stirring occasionally. Add turnip and apple cubes and fry over medium heat for about 5 minutes. (The greaves should now be light brown!) Season the lard with salt, pepper and marjoram and let it cool down lukewarm.

    Wash parsley, dab dry, chop coarsely and stir into the lard. Pour the lard into glasses, close them tightly and store in a cold place.
