Turkey with vegetables and maple syrup

  • 1 dinden (approx. 3 kg)
  • 500 g de poitrine de porc
  • 100 g de lardons fumés
  • 80 g de pain de campagne rassis
  • 2 foies de volaille
  • 2 échalotes
  • 2 brins de persil plat
  • 5 cl de Porto
  • 10 cl de lait
  • 1 wortelbos
  • 1 botte de navets
  • 500 g de panais
  • 50 cl de bouillon de poule
  • 15 cl maple syrup
  • 20 g de beurre
  • 7-10 Tbsp huile d'olive
  • 7-10 Tbsp sel et poivre

Directions

    1 Soak the bread in the milk. Peel the shallots, cut the breast into pieces. Chop it with the bacon and chicken livers. Season with salt, pepper and Port wine. Thinly slice and chop the parsley and add it to the bread.

    2 Preheat the oven to 180 °C (th 6). Garnish the turkey with the stuffing, sew the opening with kitchen thread. Oil the turkey and season with salt and pepper. Put it in an oven dish and put it in the oven for 3 hours, basting it often.

    3 Meanwhile, peel the vegetables and cut the larger ones in 2 or 4, depending on their size. Brown them in a casserole with the butter. Pour in the chicken stock and half of the maple syrup. Season with salt and pepper.

    4 Cook the vegetables over a low heat until the liquid is absorbed, stirring often (approx. 25 minutes). Add the rest of the maple syrup and stir for 5 minutes to lightly caramelize them.

    5 Serve turkey with caramelized vegetables and gravy on the side.
