Turkey strips in mustard cream

Ingredients

Servings: 4
  • 1 Head (approximately 750 g) Cauliflower
  • 7-10 Tbsp Salt
  • 1 medium onion
  • 100 g Gherkins
  • 600 g Turkey escalope
  • 2-3 TABLESPOONS Flour
  • 2 TABLESPOONS Oil
  • 300 ml Vegetable broth (instant)
  • 200 g Whipped cream
  • 3 TABLESPOONS medium hot mustard
  • 5 TABLESPOONS Cucumber water
  • 1/2 bunch Chives
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Clean and wash the cauliflower and divide it into small florets. Cook the cauliflower in boiling salted water for about 5 minutes. Drain and let drain. Peel and finely chop the onion. Cut gherkins into slices.

    Wash the turkey, dab dry and cut into strips. Turn meat in flour. Heat oil in a pan, fry turkey strips in it until golden brown and take them out. Sauté the onion in the cooking fat.

    Add cucumber slices and cauliflower and fry briefly. Deglaze with stock and cream and bring to the boil. Add meat, mustard and 50 ml cucumber stock and simmer for about 3 minutes. Wash chives, dab dry and chop finer.

    Season the sauce with salt, pepper and 1 pinch of sugar. Stir in the chives. Rice tastes good with it.
