Turkey ragout with orange-chili-carrots and ribbon noodles

Ingredients

Servings: 4
  • 1 Turkey thigh (approx. 1 kg)
  • 200 g Onions
  • 3-4 Tbsp Oil
  • 2 TEASPOONS Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp good 1/2 l clear chicken stock
  • 1 bundle (approx. 800 g) Carrots
  • 1/2–1 red chilli pepper
  • 2 TABLESPOONS Sugar
  • 20 g Butter
  • 200 ml freshly squeezed orange juice
  • 250 g Pappardelle noodles
  • 100–125 g Whipped cream
  • 1 TABLESPOON Flour
  • 3 Stem(s) Basil

Directions

    Wash the turkey leg, dab dry and remove the bone. Remove skin and fat and dice the meat. Peel the onions and cut into slices. Heat the oil in a roasting pan and fry the meat thoroughly. Finally add onions and fry briefly. Stir in tomato paste, fry briefly, season with salt, pepper and paprika. Add chicken stock, bring to the boil, cover and stew for 50-60 minutes

    Peel, wash and drain the carrots. Cut the carrots diagonally into slices. Wash and clean the chilli and cut into fine rings. Caramelise sugar in a pot, add butter and carrots, stir briefly and deglaze with orange juice. Stir in chilli and a little salt. Cover and simmer for about 5 minutes. Then simmer without lid for about 15 minutes until the carrots are cooked and the stock has thickened.

    Prepare the pasta in boiling salted water according to the instructions on the packet. When the turkey is soft, stir cream and flour until smooth and add to the meat stock. Bring to the boil and simmer for 4-5 minutes, stirring occasionally. Wash the basil, dab dry and cut into fine strips, except for a little garnish

    Pour the pasta into a sieve, rinse under cold water and drain. Arrange noodles with turkey ragout and orange-chili-carrots on plates. Sprinkle with basil and garnish
