Turkey leg with apple-carrot-vegetables

Ingredients

Servings: 4
  • 3-4 Stem(s) fresh sage
  • 1 red chilli pepper
  • 1 turkey leg to be boned by the butcher (1,4-1,5 kg)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 375 g small onions
  • 400–500 g Carrots
  • 20–30 g clarified butter
  • 300 ml Cider
  • 250 ml clear soup
  • 800 g Apples (e.g. Elstar)
  • 30 g liquid honey
  • 6 TABLESPOONS Oil
  • 450 g Potato pancake dough for potato pancakes
  • 7-10 Tbsp little wooden skewers
  • 7-10 Tbsp Kitchen yarn

Directions

    Wash the sage and dab dry. Halve the chilli, remove the seeds and chop the pod finely. Wash the turkey leg, dab dry and place it with the skin side on a chopping board. Season the meat side with salt and pepper, spread half chopped chilli and 7-8 sage leaves on top. Roll up the meat, stick together with wooden skewers and tie up with kitchen string using the shoelace method

    Onions peel and halve. Wash, peel and cut carrots into large pieces. Heat clarified butter in a roasting pan and fry the turkey leg briefly on all sides. Season with salt and pepper and take out. Stir-fry the carrots and onions in hot frying fat, season with salt and pepper. Pour in cider and stock and add the remaining sage stems. Place the turkey leg on top and braise in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for approx. 1 3/4 hours. In the meantime, scour with the braising stock or turn the leg of turkey

    Wash apples, dab dry, quarter and core them. After about half of the frying time add apples, mix into the vegetables and braise. Mix the remaining chilli and honey. 15-20 minutes before the end of the cooking time, brush the turkey leg with the chilli-honey mixture

    Heat the oil in portions in a frying pan. Fry 12-18 small potato rösti in portions from the potato pancake batter according to the instructions on the packet and keep warm. Remove turkey leg from the oven, remove skewers and kitchen string. Cut meat into slices. Season vegetables and stew stock with salt and pepper, arrange on plates with meat and potato rösti
