Trout with herb butter

Ingredients

Servings: 4
  • 4 ready-to-cook trout (approx. 400 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Flour
  • 4 TABLESPOONS Oil
  • 100 g streaky smoked bacon
  • 2 Onions
  • 1 Garlic clove
  • 2 Tomatoes
  • 1 collar Chives, parsley and dill
  • 4 TABLESPOONS Butter
  • 7-10 Tbsp Tomatoes and herbs

Directions

    Wash trout thoroughly, dab dry and season from the inside with lemon juice, salt and pepper. Turn in flour. Heat the oil in a pan and fry the trout in it over medium heat on each side for about 7 minutes until golden brown.

    Dice the bacon, peel and chop the onions. Peel and finely chop the garlic. Clean the tomatoes, carve them crosswise and blanch with boiling water and peel the skin. Quarter tomatoes, remove seeds and cut into fine cubes.

    Wash the herbs, dab dry and chop finely. Heat butter in a pot and fry the bacon in it until crispy. Add onions, garlic, tomatoes and herbs and fry. Arrange the trout on plates and spread the herb butter over them.

    Garnish with tomatoes and herbs. Boiled potatoes and a leaf salad are also delicious.
