Tortilla bites with zucchini & peppers

Ingredients

Servings: 6
  • 1 medium vegetable onion
  • 2-3 (500 g; e.g. yellow and red) Peppers
  • 2 medium zucchini
  • 3-4 Stem(s) fresh or 1/2 teaspoon dried. Marjoram
  • 2 TABLESPOONS olive oil, salt, pepper
  • 4 eggs, 1/4 l milk
  • 125 g Sour cream or crème fraîche

Directions

    Peel and chop the onion. Clean, wash and cut the bell peppers into small pieces. Zucchini clean, wash, halve lengthwise and cut into slices. Wash and finely chop the marjoram

    Heat the oil in a pan (approx. 26 cm Ø). Fry the onion, bell pepper and zucchini for about 5 minutes. Season with salt, pepper and marjoram

    Whisk eggs, milk and sour cream. Season strongly with salt and pepper and pour over the vegetables. Cover the vegetables and let them simmer at low heat for about 20 minutes.

    Remove the tortilla and cut it into pieces. Garnish with rest of marjoram

    The tortilla bites are also a great party snack and taste great cold. For the big round double the recipe, spread vegetables and egg milk on the fat pan. Put them in a hot oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for about 30 minutes
