Ingredients

  • 300 g + 2 tablespoons flour
  • 3 Eggs (size M)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 1 Garlic clove
  • 1 Onion
  • 250 g Minced beef
  • 3-4 Tbsp + 250 ml milk
  • 7-10 Tbsp Pepper
  • 1 TEASPOON Breadcrumbs
  • 75 g cooked ham
  • 6-7 Stem(s) Basil
  • 2 TABLESPOONS Butter or margarine
  • 200 g Whipped cream
  • 150 ml Vegetable broth
  • 7-10 Tbsp Sugar
  • 1-2 TEASPOONS Lemon juice
  • 30 g Parmesan cheese
  • 7-10 Tbsp Cling film

Directions

    Mix 300 g flour, eggs, oil, 2 tablespoons lukewarm water and 1 teaspoon salt with the dough hooks of the hand mixer to a smooth dough (if the dough is too dry, knead in spoonfuls of water, if it is too moist, knead in spoonfuls of flour). Form dough into a smooth ball, wrap in foil and chill for approx. 30 minutes. Peel garlic and chop finely. Peel and grate the onion over the mince. Add 3-4 tbsp. milk, garlic, 1/2 tsp.

    salt, pepper and breadcrumbs and knead. Cut ham into strips. ##Wash basil, dab dry, pluck leaves from the stalks except for a little bit for garnishing. Melt the fat in a large saucepan. Stir in 2 tablespoons of flour and sweat. Deglaze with cream, stock and 250 ml milk, bring to the boil and simmer while stirring for 1-2 minutes. Stir in ham and chopped basil, season with salt, pepper, sugar and lemon juice. Roll out the pasta dough very thinly in portions using a pasta machine (or on a floured work surface using a dough roller). Cut the rolled out dough into squares (approx. 6 x 6 cm) or wheel it out. Place 1/2-1 teaspoon of filling in the middle of each square. Brush the edges of the dough with some water. Fold the dough diagonally to the triangle and press down carefully. Moisten both corners on the long side, take them together, press them on and lay them on a floured tea towel.

    Roll out the pasta dough very thinly in portions using a pasta machine (or on a floured work surface using a dough roller). Cut the rolled out dough into squares (approx. 6 x 6 cm) or wheel it out. Place 1/2-1 teaspoon of filling in the middle of each square. Brush the edges of the dough with some water. Fold the dough diagonally to the triangle and press down carefully. Moisten both corners on the long side, take them together, press them on and lay them on a floured tea towel. Process remaining minced meat and noodle dough in the same way. Boil up plenty of salted water in a large pot. Cook half of the tortelloni in it at low heat for 4-5 minutes, remove and keep warm. Cook the rest of the tortelloni for 4-5 minutes, drain in a sieve. Put all tortelloni back into the pot. Mix the tortelloni with sauce, arrange on plates, sprinkle with cheese and garnish with basil

Cook the rest of the tortelloni for 4-5 minutes, drain in a sieve. Put all tortelloni back into the pot. Mix the tortelloni with sauce, arrange on plates, sprinkle with cheese and garnish with basil
