Drain the tuna and mash half of it with the, anchovies, 1/4 of the caper apples, mayonnaise, lemon juice, olive oil and 1-2 tablespoons of water. Season the sauce with salt and pepper if necessary. Wash and clean the tomatoes, dab dry and cut into slices. Cut remaining caper apples in half lengthwise.
Divide remaining tuna into pieces. Put the tomatoes, capers and remaining tuna pieces on 4 plates. Spread the tuna sauce in the middle of the plates and garnish with basil, lemon and olives. Serve with Italian white bread
