Tomato-cucumber salad

Ingredients

Servings: 4
  • 5 Tomatoes (about 450 g)
  • 2 red and yellow peppers
  • 3 red onions
  • 1 (approx. 450 g) Cucumber
  • 1 collar Parsley
  • 4-5 Stem(s) Mint
  • 1 Organic Lime
  • 100 ml freshly squeezed lime juice
  • 1 TEASPOON + some brown sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Olive oil

Directions

    Clean, wash, quarter, seed and finely dice the tomatoes. Peppers clean, wash and finely dice. Peel and finely dice onions. Wash, clean and finely dice the cucumber.

    Wash herbs, shake dry, pluck leaves from the stems and, except for some mint for garnishing, cut finely. Wash the lime thoroughly, peel with a zest ripper. Use the rest of the lime for other purposes.

    Mix lime juice, 1 tsp. sugar, salt and pepper well. Fold in the oil.

    Mix cucumber, paprika, tomatoes, lime zests, herbs, except for something to sprinkle, and vinaigrette. Leave to stand for about 30 minutes. Season again with salt, pepper and sugar. Arrange in a bowl, sprinkle with herbs and garnish with mint.
