Ingredients

  • 1 untreated orange
  • 4 Stem(s) Basil
  • 4 TABLESPOONS Wine vinegar
  • 1 TABLESPOON Mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Honey
  • 5 TABLESPOONS Olive oil
  • 1 Shallot
  • 300 g Ciabatta bread
  • 50 g Rocket
  • 500 g Tomatoes
  • 75 g Parmesan cheese
  • 50 g Parma ham

    For the vinaigrette, wash the orange vinaigrette in hot water, grate it dry and peel it into thin strips using a zest ripper. Peel the orange so that the white skin is completely removed. Remove the fillets between the parting skins.

    Squeeze the juice. Bring orange juice to the boil and boil down like syrup. Wash the basil, shake dry and pluck the leaves from the stalks. Whisk vinegar, mustard, salt, pepper and honey. Add 2 tablespoons of oil drop by drop.

    Peel the shallot and cut into fine cubes. Stir orange syrup, zest, pulp and shallot into the vinaigrette. Cut the bread into cubes. Heat 3 tablespoons of oil in a large pan.

    Roast the bread cubes at medium heat while turning regularly. Clean the rocket, wash and shake dry. Wash, clean and slice the tomatoes. Break the Parmesan cheese with a knife into splinters.

    Cut the ham slices into thirds. Mix all salad ingredients and arrange in bowls.
