Tomato and apple cream soup with meatballs with QimiQ

Ingredients

Servings: 4
  • 750 ripe tomatoes
  • 1 Onion
  • 2 small apples
  • 2 TABLESPOONS Oil
  • 1-2 TEASPOONS Maple syrup
  • 500 ml Vegetable broth
  • 2–3 stalks of chives
  • 1 (approx. 125 g) blanched veal sausage
  • 8 Stem(s) Oregano
  • 125 g QimiQ sauce base for sauces & soups
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Cumin
  • 7-10 Tbsp Sweet peppers
  • 3-4 Tbsp Milk

Directions

    Wash, clean and chop the tomatoes. Peel and finely chop the onion. Peel apples, remove core and chop the flesh

    Heat 1 tablespoon of oil in a saucepan. Sauté the onion and apples for about 2 minutes. Add tomatoes and maple syrup and continue to steam for about 3 minutes. Deglaze with broth and simmer covered for about 15 minutes

    Wash the chives, dab dry and cut into small rolls. Press sausage meat from the skin into a bowl. Add the chives. Form dumplings with 2 teaspoons. Heat 1 tsp. oil in a coated pan. Fry the dumplings for 3-4 minutes, turning them over

    Wash oregano, shake dry and chop the leaves of 6 stems into small pieces. Add QimiQ to the soup, except for 1 tbsp Puree the soup and season to taste with salt, pepper, cumin and a little paprika Stir in the oregano. Whisk the rest of the QimiQ with 3-4 tbsp. milk until smooth Arrange the soup and dumplings in bowls and garnish with the remaining oregano and QimiQ
