Cut the mango off the stone. Peel the flesh and cut half into slices. Use the rest of the mango for other purposes. Wash the chives, dab dry and chop smaller. Heat half of the butter in a large pan. Fry 2 slices of toast in it until crispy, take them out. Heat the rest of the butter in the pan, fry 2 more slices of toast until crispy, remove.
Spread each slice of toast with 1 1/2 tbsp. mango chutney. Cover each with 2 slices of goat gouda and 1 slice of cold cuts. Sprinkle with chives
