Cut the mozzarella balls into 8 slices each. Wash and clean the tomatoes and cut them into 8 slices each. Clean, wash and drain the salad well
Cover 4 slices of toast with 1 1/2 tablespoons of pesto, 4 slices of tomato, some rocket and 4 slices of mozzarella. Place the remaining slices of toast on top. Heat half of the butter in a large pan. Add sandwiches and fry until crispy while turning, remove. Do the same with the remaining sandwiches. Halve the sandwiches diagonally and serve immediately
