Pan-fried tomatoes with coarse sausage and toast

Ingredients

  • 1/3 Baguette bread
  • 5 TABLESPOONS Olive oil
  • 4 coarse fried sausages (à approx. 125 g)
  • 1.5 kg Tomatoes
  • 2 Onions
  • 2 Garlic cloves
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 1-2 TABLESPOONS Wine vinegar
  • 1 small pot of basil

Directions

    Cut the bread into slices. Heat 4 tablespoons of oil in a large pan with a high rim. Fry the bread in portions for about 4 minutes while turning. Cut the sausages into slices. Heat 1 tbsp. oil in a frying pan and fry the sausage slices for approx. 10 minutes, turning them over.

    In the meantime, wash and clean the tomatoes and, depending on their size, halve or quarter them. Peel onions and garlic. Cut garlic into slices, onions into cubes. Remove the sausage from the pan. Sauté onion and garlic for about 8 minutes in the frying fat.

    After about 2 minutes add the tomatoes. Season to taste with salt, pepper, sugar and vinegar. Wash basil, shake dry, pluck leaves from the stalks and cut into strips. Add sausage, bread and basil to the pan and fold in.
