Mix coffee, amaretto and 1 teaspoon sugar. Place the cantuccini on a plate and sprinkle with coffee mixture. Mix vanillin sugar, milk, quark and 2 tablespoons sugar. Whip cream until stiff and fold in.
Wash the figs, cut the stalk. Dab figs dry and cut flesh into pieces. Puree figs and cherry nectar. Arrange cantuccini on plates. Arrange some cream and fig sauce on each cantuccini.
Dust with cocoa.
