Sweet Potato-Zucchini Moussaka

Ingredients

  • 400-500 g Sweet potatoes
  • 7-10 Tbsp Salt
  • 1 Garlic clove
  • 1 Onion
  • 600 g Courgette
  • 4 Stem(s) Oregano
  • 3 TABLESPOONS Oil
  • 400 g mixed minced meat
  • 1 can(s) (425 ml) Tomatoes
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Allspice
  • 7-10 Tbsp Cinnamon
  • 170 ml Milk
  • 1 TABLESPOON Flour
  • 2 Eggs (size M)
  • 50 g Parmesan cheese
  • 150 g Greek yogurt
  • 7-10 Tbsp Grease

Directions

    Peel the potatoes and boil them in salted water for about 20 minutes. Peel garlic and chop finely. Peel onion and chop finely. Wash and clean the zucchini and cut them into approx. 3 mm thin slices. Wash the oregano, dab dry and put 2 stems aside for garnishing. Pick leaves from 2 stems and chop roughly.

    Heat 1 tablespoon of oil in a frying pan and sauté diced onions. Add the minced meat and fry. After about 5 minutes add garlic and canned tomatoes and season with salt, pepper, allspice and a little cinnamon. Drain the potatoes and let them cool down. Fry minced meat on medium heat until the liquid has evaporated, then add oregano and remove minced meat from the pan. Heat 2 tablespoons of oil in a frying pan. Fry zucchini slices in portions on both sides for 1-2 minutes each and season with salt and pepper. Remove the zucchini slices from the pan and place on kitchen paper. Cut sweet potatoes into slices of about 3 mm. Mix flour and milk, then add eggs. Slowly heat up while stirring and bring to the boil. Season the sauce with salt and pepper and put 4 tablespoons aside.

    Fry zucchini slices in portions on both sides for 1-2 minutes each and season with salt and pepper. Remove the zucchini slices from the pan and place on kitchen paper. Cut sweet potatoes into slices of about 3 mm. Mix flour and milk, then add eggs. Slowly heat up while stirring and bring to the boil. Season the sauce with salt and pepper and put 4 tablespoons aside. Finely grate Parmesan cheese. Layer 2 layers each of zucchini, minced meat, sauce and sweet potatoes alternately. Mix the removed sauce and yoghurt and put it on the casserole. Sprinkle with parmesan. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 45 minutes. Remove the moussaka from the oven and garnish with oregano leaves

    Finely grate Parmesan cheese. Layer 2 layers each of zucchini, minced meat, sauce and sweet potatoes alternately. Mix the removed sauce and yoghurt and put it on the casserole. Sprinkle with parmesan. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 45 minutes. Remove the moussaka from the oven and garnish with oregano leaves
