Swedish meatballs with radish and cucumber salad

Ingredients

Servings: 4
  • 250 g floury potatoes
  • 7-10 Tbsp Salt
  • 1 Onion
  • 6 TABLESPOONS Oil
  • 1 collar Parsley
  • 1 Cucumber
  • 200 g Radishes
  • 1 collar Dill
  • 50 ml White wine vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 400 g mixed minced meat
  • 300 g Pork sausage
  • 3 Eggs (size M)
  • 2 TEASPOONS medium hot mustard
  • 7-10 Tbsp Dill blossom, dill flags and radishes

Directions

    Wash potatoes thoroughly and cook in boiling water for about 25 minutes. In the meantime peel and finely dice the onion. Heat 1 tablespoon of oil in a small pan and fry the onion until transparent. Remove from the pan and let it cool down. Wash parsley, dab dry and chop finely. Clean and wash the cucumber and peel it with a peeler into long strips or cut it into thin slices.

    Clean, wash and slice the radishes. Wash dill, dab dry and chop finely. Mix vinegar, dill, salt, pepper and sugar well. Fold in 2 tablespoons of oil. Mix the cucumbers and radishes, add the vinaigrette and leave to stand for a while. Drain potatoes, rinse and peel. Immediately press through a potato press and allow to cool. Knead potatoes, minced meat, ground pork, onion, eggs and mustard with the dough hooks of the hand mixer. Season to taste with salt and pepper. Form approx. 24 dumplings from the dough with wet hands. Heat 3 tablespoons of oil in a very large frying pan and fry the dumplings for about 12 minutes until golden brown. Serve the dumplings on a plate garnished with dill blossom, dill flags and radishes.

Season to taste with salt and pepper. Form approx. 24 dumplings from the dough with wet hands. Heat 3 tablespoons of oil in a very large frying pan and fry the dumplings for about 12 minutes until golden brown. Serve the dumplings on a plate garnished with dill blossom, dill flags and radishes. Serve the salad in a small bowl. Cranberries taste great with it
