Sturgeon burger with rissoles, potato rösti and fried egg

Ingredients

Servings: 4
  • 800 g Potatoes
  • 7-10 Tbsp Salt
  • 3 Onions
  • 80 g cooked vacuum-packed beetroot
  • 2 Gherkins
  • 2 TABLESPOONS Butter
  • 100 ml Gherkin stock
  • 1 tin(s) (340 g) corned beef
  • 7-10 Tbsp Pepper
  • 1 (80 g) bag + 4 tablespoons of mashed potato flakes
  • 1 Apples (e.g. Boskop)
  • 2 TEASPOONS Sugar
  • 5 Eggs (size M)
  • 60 g Flour
  • 4 TABLESPOONS Oil
  • 6 stalks of chives

Directions

    Wash the potatoes and cook in boiling salted water for about 20 minutes. Drain, rinse with cold water and peel. Let cool off. Peel and chop 1 onion. Roughly dice beetroot and gherkins.

    Melt 1 tablespoon of butter in a frying pan. Sauté the onion in it. Add beetroot and steam briefly. Add gherkins and stock, remove from heat. Coarsely chop the corned beef, chop finely with the beetroot mixture in the universal chopper.

    Season with salt and pepper.

    Pour the mixture into a bowl. When the mixture has cooled down, mix with 80 g of mashed potatoes. Form approx. 4 meatballs from the mixture. Turn into 4 tablespoons of puree flakes. Peel 2 onions and cut into thick rings.

    Peel apple, remove core with an apple corer. Cut apple into thick slices. Heat 1 tablespoon butter in a frying pan. Fry the apple on each side and remove. Sauté onions in frying fat, sprinkle with sugar and allow to caramelize slightly.

    Take it out, keep it warm.

    Roughly grate the potatoes. Knead with 1 egg and flour. Season with salt and pepper. Form 4 Rösti from the mixture. Heat 3 tablespoons of oil in a large pan and fry the Rösti on each side until golden brown.

    Remove and keep warm as well. Fry the meatballs in the frying fat for about 2 minutes on each side. Heat 1 tablespoon of oil in another pan. Beat 4 eggs and slide them into the pan side by side, season with salt and pepper.

    Fry until the egg whites are stiff. Wash the chives, shake dry and cut into fine rolls. Arrange the Rösti on plates. Place the meatballs on top. Arrange apple, fried eggs and onion slices on top.

    Serve sprinkled with chives.
