Stuffed tomatoes with avocado cream

Ingredients

Servings: 4
  • 1 ripe avocado
  • 1 Garlic clove
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cayenne pepper
  • 12-20 small tomatoes (about 25 g each)
  • several sheets Lettuce

Directions

    Cut the avocado in half, remove the core. Peel the fruit halves. Roughly dice the fruit flesh. Peel garlic, crush finely. Puree avocado and garlic with a chopping stick. Season puree with lemon juice, salt and cayenne pepper.

    Wash the tomatoes and dab dry. Cut off one lid each, remove the tomato seeds. Fill avocado cream into a piping bag with star-shaped spout and squirt into the tomatoes. Arrange the tomatoes on some salad. Italian white bread tastes good with it
